Ingredients:

  • 1 cup cooked brown rice
  • 2 bell peppers, diced (any color)
  • 1 cup broccoli florets, steamed
  • 1 cup shredded cheese (cheddar or a blend)
  • 4 large eggs
  • 4 strips of bacon, cooked and crumbled
  • 1/2 cup diced tomatoes
  • 1 avocado, sliced
  • 1/2 cup kale, chopped
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1/2 cup cooked beans (black or pinto)
  • 1/2 cup grated carrots

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cooked brown rice, diced bell peppers, steamed broccoli, shredded cheese, crumbled bacon, diced tomatoes, chopped kale, grated carrots, and cooked beans.
  3. In a separate bowl, whisk the eggs with garlic powder, salt, and pepper. Pour the egg mixture over the rice and vegetable mixture, stirring gently to combine.
  4. Transfer the mixture to a greased baking dish and spread it evenly.
  5. Bake in the preheated oven for 25-30 minutes, or until the eggs are set and the top is golden brown.
  6. Remove from the oven and let cool for a few minutes before slicing. Serve warm, topped with sliced avocado.
