Ingredients:

  • 2 large potatoes, peeled and diced
  • 1 cup broccoli florets
  • 1 cup Brussels sprouts, halved
  • 1 cup shredded cheddar cheese
  • 4 strips of bacon, cooked and crumbled
  • 1/2 cup heavy cream
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1/4 cup grated Parmesan cheese

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a large pot, boil the diced potatoes in salted water for about 10-15 minutes until tender. Drain and set aside.
  3. In a large mixing bowl, combine the boiled potatoes, broccoli florets, halved Brussels sprouts, crumbled bacon, garlic powder, onion powder, salt, and pepper.
  4. In a separate bowl, mix the heavy cream and half of the cheddar cheese until well combined.
  5. Pour the cream mixture over the vegetables and potatoes, stirring to coat evenly.
  6. Transfer the mixture to a greased 9x13 inch baking dish. Top with the remaining cheddar cheese and sprinkle with grated Parmesan cheese.
  7. Drizzle with olive oil and bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
  8. Allow to cool slightly before serving.
