Ingredients:

  • 2 cups cooked rice noodles
  • 1 lb boneless, skinless chicken breast, diced
  • 1 can ranch-style beans, drained and rinsed
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1/2 cup green onions, chopped (for garnish)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add the diced chicken and season with garlic powder, onion powder, paprika, salt, and pepper. Cook until the chicken is browned and cooked through, about 7-10 minutes.
  3. In a large bowl, combine the cooked rice noodles, ranch-style beans, cooked chicken, sour cream, and chicken broth. Mix well until all ingredients are evenly coated.
  4. Transfer the mixture to a greased baking dish. Sprinkle the shredded cheddar cheese evenly over the top.
  5. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
