Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 cups frozen seasoned fries
  • 4 medium potatoes, peeled and cubed
  • 4 cloves garlic, minced
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
  • 4 tablespoons butter
  • Salt and pepper to taste
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Olive oil for cooking

Instructions:

  1. Preheat your oven to 425°F (220°C).
  2. In a large pot, boil the cubed potatoes until tender, about 15-20 minutes. Drain and return to the pot.
  3. Add butter, minced garlic, milk, salt, and pepper to the potatoes. Mash until smooth and creamy. Set aside.
  4. While the potatoes are cooking, season the chicken breasts with paprika, garlic powder, onion powder, salt, and pepper.
  5. Heat olive oil in a skillet over medium-high heat. Cook the chicken breasts for about 6-7 minutes on each side, until golden brown and cooked through.
  6. During the last few minutes of cooking the chicken, sprinkle shredded cheddar cheese on top and cover to melt.
  7. While the chicken is cooking, spread the frozen seasoned fries on a baking sheet and bake according to package instructions until crispy.
  8. To serve, place a scoop of garlic mashed potatoes on each plate, top with cheesy chicken, and serve alongside a generous portion of seasoned fries.
