Ingredients:

  • 2 lbs Yukon Gold potatoes, thinly sliced
  • 1 cup shredded sharp cheddar cheese
  • 1 cup milk
  • 1/2 cup sour cream
  • 4 cloves garlic, minced
  • 1 tablespoon fresh thyme leaves
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1/4 teaspoon paprika

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the sliced potatoes, minced garlic, thyme, olive oil, salt, and pepper. Toss until the potatoes are evenly coated.
  3. In a separate bowl, mix together the milk, sour cream, and paprika.
  4. In a greased baking dish, layer half of the potato mixture, followed by half of the cheddar cheese. Pour half of the milk mixture over the cheese.
  5. Repeat the layers with the remaining potatoes, cheese, and milk mixture.
  6. Top with grated Parmesan cheese.
  7. Cover with aluminum foil and bake for 45 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the top is golden brown and the potatoes are tender.
  8. Let it cool for a few minutes before serving.
