Ingredients:

  • 2 cups diced russet potatoes
  • 1 cup diced cooked ham
  • 1 cup shredded cheddar cheese
  • 4 large eggs
  • 1/2 cup Greek yogurt
  • 1/4 cup milk
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Chopped chives for garnish

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add the diced potatoes and season with salt, pepper, garlic powder, and onion powder. Cook until the potatoes are golden and tender, about 10-15 minutes.
  3. In a large mixing bowl, whisk together the eggs, Greek yogurt, and milk until smooth. Season with a little salt and pepper.
  4. Once the potatoes are cooked, remove from heat and stir in the diced ham and half of the shredded cheddar cheese.
  5. Pour the egg mixture over the potato and ham mixture in the skillet, stirring gently to combine. Sprinkle the remaining cheddar cheese on top.
  6. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the eggs are set and the cheese is bubbly and golden.
  7. Remove from the oven, let it cool slightly, and garnish with chopped chives before serving.
