Ingredients:

  • 1 pound hot Italian sausage
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 stalks celery, chopped
  • 2 cups broccoli florets
  • 4 cups chicken stock
  • 1 cup cheddar cheese, shredded
  • 1 can cheesy chicken broccoli soup
  • 1 can cooked chicken breast, drained
  • 2 cups cooked rice
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat a drizzle of olive oil over medium heat. Add the chopped onion, celery, and minced garlic, and sauté until soft and fragrant, about 5 minutes.
  3. Add the hot Italian sausage to the skillet, breaking it apart with a spoon. Cook until browned and cooked through, about 7-10 minutes.
  4. Stir in the broccoli florets and cook for another 3-4 minutes until they are tender but still bright green.
  5. In a large mixing bowl, combine the cooked rice, chicken stock, cheesy chicken broccoli soup, and drained canned chicken. Mix well.
  6. Add the sausage and vegetable mixture to the bowl and stir to combine. Season with salt and pepper to taste.
  7. Transfer the mixture to a greased baking dish. Sprinkle the shredded cheddar cheese evenly on top.
  8. Cover with foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
  9. Let it cool slightly before serving.
