Ingredients:

  • 4 boneless pork cutlets
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup fresh parsley, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 eggs, beaten
  • 1/4 cup all-purpose flour
  • Olive oil for frying

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Season the pork cutlets with salt, pepper, garlic powder, and onion powder on both sides.
  3. Set up a breading station: place the flour in one shallow dish, the beaten eggs in another, and mix the breadcrumbs, Parmesan cheese, mozzarella cheese, parsley, thyme, salt, and pepper in a third dish.
  4. Dredge each pork cutlet in flour, shaking off excess, then dip into the beaten eggs, and finally coat with the breadcrumb mixture, pressing gently to adhere.
  5. In a large skillet, heat olive oil over medium heat. Once hot, add the breaded pork cutlets and cook for about 4-5 minutes on each side until golden brown.
  6. Transfer the cutlets to a baking sheet and bake in the preheated oven for an additional 10 minutes, or until the internal temperature reaches 145°F (63°C).
  7. Remove from the oven and let rest for a few minutes before serving.
