Ingredients:

  • 4 medium potatoes, peeled and sliced
  • 1 cup cottage cheese
  • 1 cup shredded cheese (cheddar or your choice)
  • 3 large eggs
  • 1 cup milk
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon fresh parsley, chopped (optional)

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a large pot, boil the sliced potatoes in salted water until tender, about 10-15 minutes. Drain and set aside.
  3. In a mixing bowl, combine the cottage cheese, shredded cheese, eggs, milk, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  4. In a greased baking dish, layer half of the cooked potatoes. Pour half of the cheese mixture over the potatoes. Repeat with the remaining potatoes and cheese mixture.
  5. Sprinkle additional cheese on top if desired.
  6. Bake in the preheated oven for 30-35 minutes, or until the top is golden and bubbly.
  7. Let it cool slightly before serving. Garnish with fresh parsley if using.
