Ingredients:

  • 1 cup cooked rice
  • 1 cup canned beans (black or pinto), drained and rinsed
  • 1 medium onion, finely chopped
  • 1 cup cheese slices (your choice)
  • 1 tablespoon oil (olive or vegetable)
  • 1 tablespoon mustard
  • 1 tablespoon ketchup
  • 1/2 cup sour cream
  • 4 large tortillas
  • Salt and pepper to taste
  • Seasonings (cumin, paprika, garlic powder, or your choice)

Instructions:

  1. In a skillet, heat the oil over medium heat. Add the chopped onion and sauté until translucent.
  2. Add the cooked rice and beans to the skillet. Season with salt, pepper, and your choice of seasonings (like cumin and paprika) and stir well to combine.
  3. Remove the skillet from heat and stir in the mustard and ketchup for a unique flavor twist.
  4. Lay out the tortillas and place a portion of the rice and bean mixture in the center of each. Top with cheese slices.
  5. Fold the sides of the tortillas over the filling and roll them up tightly.
  6. In the same skillet, place the wraps seam side down and lightly toast them until the cheese melts and the tortillas are golden brown, about 2-3 minutes on each side.
  7. Serve warm with sour cream on the side for dipping.
