Ingredients:

  • 300g penne pasta
  • 2 cups fresh spinach, chopped
  • 1 cup sun-dried tomatoes, chopped
  • 2 cups marinara sauce
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup parmesan cheese, grated
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Olive oil for drizzling

Instructions:

  1. Preheat the oven to 180°C (350°F).
  2. Cook the penne pasta according to package instructions until al dente. Drain and set aside.
  3. In a large mixing bowl, combine the cooked pasta, chopped spinach, sun-dried tomatoes, marinara sauce, ricotta cheese, half of the mozzarella cheese, garlic, oregano, basil, salt, and pepper. Mix well.
  4. Transfer the pasta mixture into a greased baking dish, spreading it evenly.
  5. Top with the remaining mozzarella cheese and sprinkle with parmesan cheese.
  6. Drizzle a little olive oil on top to enhance browning.
  7. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and golden brown.
