Ingredients:

  • 1 lb ground turkey
  • 1 lb frozen mixed vegetables
  • 1 can creamed corn
  • 1/2 cup lentils, rinsed and drained
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 lb tater tots
  • Salt and pepper to taste
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tbsp olive oil

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add the ground turkey and cook until browned, about 5-7 minutes.
  3. Stir in the garlic powder, onion powder, salt, and pepper. Cook for an additional 2 minutes.
  4. Add the frozen mixed vegetables and rinsed lentils to the skillet, and cook for another 5 minutes until the vegetables are tender.
  5. Stir in the can of creamed corn and half of the shredded cheese until well combined.
  6. Transfer the turkey and vegetable mixture to a greased 9x13 inch baking dish. Spread it evenly.
  7. Top the mixture with tater tots in a single layer. Sprinkle the remaining cheese on top.
  8. Bake in the preheated oven for 30-35 minutes, or until the tater tots are golden brown and crispy.
  9. Let it cool for 5 minutes before serving. Enjoy your comforting casserole!
