Ingredients:

  • 2 cups cooked pasta (penne or fusilli)
  • 1 lb chicken breast, diced
  • 2 cups celery, chopped
  • 2 medium potatoes, diced
  • 1 large onion, finely chopped
  • 2 cups pasta sauce (your choice)
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add the chopped onions and sauté until translucent.
  3. Add the diced chicken to the skillet and cook until browned and cooked through, about 7-10 minutes.
  4. Stir in the chopped celery and diced potatoes, cooking for an additional 5 minutes until they begin to soften.
  5. Add the pasta sauce, oregano, garlic powder, salt, and pepper. Mix well and let simmer for 5 minutes.
  6. In a large bowl, combine the cooked pasta with the chicken and vegetable mixture. Stir until well combined.
  7. Transfer the mixture to a greased baking dish. Top with shredded mozzarella cheese.
  8. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  9. Remove from the oven and let cool slightly. Garnish with fresh parsley before serving.
