Ingredients:

  • 500g chicken thighs, boneless and skinless
  • 2 tablespoons vegetable oil
  • 2 large onions, finely sliced
  • 4 cloves garlic, minced
  • 1-inch ginger, grated
  • 2 green chilies, slit
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1 teaspoon smoked paprika
  • 400g canned tomatoes, crushed
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions:

  1. Heat the vegetable oil in a large pan over medium heat. Add the cumin seeds and let them sizzle for a few seconds.
  2. Add the sliced onions and sauté until they turn golden brown.
  3. Stir in the minced garlic, grated ginger, and green chilies. Cook for another 2-3 minutes until fragrant.
  4. Add the chicken thighs to the pan and cook until they are browned on all sides.
  5. Sprinkle in the coriander powder, turmeric powder, garam masala, and smoked paprika. Stir well to coat the chicken in the spices.
  6. Pour in the crushed tomatoes and season with salt. Bring to a boil, then reduce the heat and simmer for 25-30 minutes until the chicken is tender and the sauce thickens.
  7. Garnish with fresh coriander leaves before serving.
