Ingredients:

  • 2 boneless, skinless chicken breasts
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/4 cup fresh basil leaves, chopped
  • 2 tablespoons balsamic reduction
  • 1 large egg, beaten
  • Olive oil for frying

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a shallow bowl, mix panko breadcrumbs, grated Parmesan cheese, oregano, garlic powder, salt, and black pepper.
  3. Dip each chicken breast in the beaten egg, then coat with the breadcrumb mixture, pressing firmly to adhere.
  4. In a large skillet, heat olive oil over medium-high heat. Fry the chicken breasts for 3-4 minutes on each side until golden brown.
  5. Transfer the chicken to a baking dish. Pour marinara sauce over each piece, then sprinkle with mozzarella cheese.
  6. Bake in the preheated oven for 15-20 minutes, or until the cheese is bubbly and the chicken is cooked through.
  7. Remove from the oven and let rest for a few minutes. Drizzle with balsamic reduction and garnish with fresh basil before serving.
