Ingredients:

  • 1 lb chicken breast, cut into bite-sized pieces
  • 1 cup plain yogurt
  • 2 tablespoons lemon juice
  • 2 tablespoons tikka masala spice blend
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • Cooking spray or oil for baking

Instructions:

  1. In a large bowl, combine yogurt, lemon juice, tikka masala spice blend, garlic powder, ginger powder, salt, and black pepper to create a marinade.
  2. Add the chicken pieces to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 1 hour, preferably overnight.
  3. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  4. Set up a dredging station: Place flour in one bowl, beaten eggs in another, and breadcrumbs in a third bowl.
  5. Remove the marinated chicken from the fridge. Dip each piece first in flour, then in beaten eggs, and finally coat with breadcrumbs.
  6. Arrange the coated nuggets on the prepared baking sheet. Lightly spray or drizzle with oil.
  7. Bake in the preheated oven for 20-25 minutes, or until the nuggets are golden brown and cooked through, flipping halfway through the cooking time.
