Ingredients:

  • 1 lb boneless, skinless chicken thighs
  • 1 cup plain yogurt
  • 2 tablespoons lemon juice
  • 2 teaspoons garam masala
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric
  • 1 teaspoon chili powder
  • 1 tablespoon ginger, minced
  • 1 tablespoon garlic, minced
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 1 can (14 oz) diced tomatoes
  • 1 cup coconut milk
  • Salt to taste
  • Fresh cilantro for garnish

Instructions:

  1. In a bowl, mix yogurt, lemon juice, garam masala, cumin, coriander, turmeric, chili powder, ginger, garlic, and salt. Add chicken and marinate for at least 1 hour or overnight for best results.
  2. Preheat the grill to medium-high heat. Grill the marinated chicken for about 5-7 minutes on each side until fully cooked. Remove and let it rest before cutting into bite-sized pieces.
  3. In a large skillet, heat vegetable oil over medium heat. Add chopped onion and sauté until translucent.
  4. Add diced tomatoes and cook for about 5 minutes until they soften. Stir in coconut milk and bring to a simmer.
  5. Add the grilled chicken pieces to the sauce, stirring to combine. Allow it to simmer for about 10 minutes to meld the flavors. Adjust salt if necessary.
  6. Serve hot, garnished with fresh cilantro, alongside rice or naan.
