Ingredients:

  • 1 lb boneless, skinless chicken thighs
  • 2 tablespoons chipotle in adobo sauce, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 8 small corn tortillas
  • 1 ripe mango, diced
  • 1/2 red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime

Instructions:

  1. In a bowl, combine the minced chipotle, cumin, garlic powder, onion powder, salt, pepper, and olive oil to create a marinade.
  2. Add the chicken thighs to the marinade, coating them well. Let them marinate for at least 30 minutes.
  3. While the chicken is marinating, prepare the mango salsa by combining diced mango, red onion, jalapeño, cilantro, and lime juice in a bowl. Mix well and set aside.
  4. Preheat a grill or skillet over medium-high heat. Cook the marinated chicken thighs for about 6-7 minutes on each side, or until fully cooked and nicely charred.
  5. Once cooked, let the chicken rest for a few minutes before slicing it into strips.
  6. Warm the corn tortillas on the grill or in a skillet until pliable.
  7. Assemble the tacos by placing sliced chicken on each tortilla and topping with fresh mango salsa. Serve immediately.
