Ingredients:

  • 4 chicken thighs, bone-in and skin-on
  • 1 cup green enchilada sauce
  • 2 chipotle peppers in adobo sauce, minced
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup corn, fresh or canned
  • Fresh cilantro for garnish

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, mix the minced chipotle peppers, olive oil, garlic powder, onion powder, cumin, salt, and pepper to create a marinade.
  3. Rub the marinade all over the chicken thighs, ensuring they are well-coated.
