Ingredients:

  • 2 large sweet potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • Salt to taste
  • 1 ripe avocado, diced
  • 1/4 cup crumbled feta cheese
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • 1/2 cup Greek yogurt
  • 1 tablespoon chipotle in adobo sauce, minced

Instructions:

  1. Preheat the oven to 425°F (220°C).
  2. Wash and slice the sweet potatoes into thin rounds (about 1/4 inch thick).
  3. In a large bowl, toss the sweet potato rounds with olive oil, smoked paprika, garlic powder, cumin, and salt until evenly coated.
  4. Spread the sweet potato rounds in a single layer on a baking sheet lined with parchment paper.
  5. Bake for 20-25 minutes, flipping halfway through, until the sweet potatoes are crispy and golden.
  6. While the sweet potatoes are baking, prepare the chipotle crema. In a bowl, mix the Greek yogurt, chipotle in adobo sauce, and lime juice until smooth. Adjust seasoning if needed.
  7. Once the sweet potatoes are done, remove them from the oven and let them cool slightly.
  8. To assemble the nachos, layer the sweet potato rounds on a serving platter, drizzle with chipotle crema, and top with diced avocado, crumbled feta cheese, and chopped cilantro.
  9. Serve immediately and enjoy!
