Ingredients:

  • 1 cup fresh raspberries
  • 1 cup heavy cream
  • 1/2 cup confectioners' sugar
  • 1/4 cup corn syrup
  • 1/4 cup cocoa butter, melted
  • 1 cup dark chocolate chips
  • 1/4 cup freeze-dried raspberries, crushed
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions:

  1. In a blender, puree the fresh raspberries until smooth. Strain to remove seeds.
  2. In a medium saucepan, combine heavy cream, confectioners' sugar, corn syrup, and raspberry puree. Heat over medium heat until warm, stirring occasionally.
  3. Remove from heat and stir in melted cocoa butter, vanilla extract, and salt. Mix until well combined.
  4. Pour the mixture into a shallow dish and refrigerate until set, about 2 hours.
  5. Once set, scoop out small portions and shape them into balls. Return to the refrigerator to firm up.
  6. Melt dark chocolate chips in a microwave or double boiler until smooth.
  7. Dip each raspberry cream ball into the melted chocolate, ensuring they are fully coated. Place them on a parchment-lined baking sheet.
  8. Sprinkle crushed freeze-dried raspberries on top while the chocolate is still wet.
  9. Chill the candies in the refrigerator until the chocolate is set. Serve chilled or at room temperature.
