Ingredients:

  • 1 lb chopped meat (beef or turkey)
  • 2 bell peppers (any color), diced
  • 2 cups fresh spinach, chopped
  • 8 oz pasta (penne or rotini)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup ricotta cheese
  • 1 cup marinara sauce
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese (for topping)
  • 2 tbsp olive oil

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Cook the pasta according to package instructions until al dente. Drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add the diced onion and garlic, sautéing until the onion is translucent.
  4. Add the chopped meat to the skillet, cooking until browned. Season with salt, pepper, and Italian seasoning.
  5. Stir in the diced bell peppers and chopped spinach, cooking until the spinach has wilted.
  6. In a large mixing bowl, combine the cooked pasta, ricotta cheese, marinara sauce, and the meat and vegetable mixture. Mix well until everything is evenly coated.
  7. Transfer the mixture to a greased baking dish and spread it evenly. Top with shredded mozzarella cheese.
  8. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
