Ingredients:

  • 1 tablespoon olive oil
  • 100g chorizo, diced
  • 50g bacon, chopped
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 400g canned crushed tomatoes
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • Salt and pepper, to taste
  • 4 large eggs
  • Fresh parsley, for garnish

Instructions:

  1. Heat olive oil in a medium skillet over medium heat.
  2. Add the diced chorizo and chopped bacon, cooking until browned and crispy, about 5 minutes.
  3. Stir in the chopped onion and garlic, cooking until softened, about 3 minutes.
  4. Add the crushed tomatoes, paprika, cumin, salt, and pepper. Simmer for 10 minutes, allowing the flavors to meld.
  5. Make small wells in the sauce and crack an egg into each well. Cover the skillet and cook until the eggs are set to your liking, about 5-7 minutes.
  6. Remove from heat and garnish with fresh parsley before serving.
