Ingredients:

  • 2 cups whole milk
  • 1 cup heavy cream
  • 4 large egg yolks
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground nutmeg
  • 1 tablespoon orange zest
  • 2 tablespoons brandy (optional)
  • Pinch of salt

Instructions:

  1. In a medium saucepan, combine the milk and heavy cream. Heat over medium heat until it just begins to simmer, then remove from heat.
  2. In a separate bowl, whisk together the egg yolks and granulated sugar until pale and thick.
  3. Gradually pour the hot milk mixture into the egg yolk mixture, whisking constantly to temper the eggs.
  4. Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens enough to coat the back of a spoon (about 10 minutes). Do not let it boil.
  5. Remove from heat and stir in the vanilla extract, ground nutmeg, orange zest, and brandy if using. Add a pinch of salt to enhance the flavors.
  6. Strain the custard through a fine mesh sieve into a bowl to remove any cooked egg bits.
  7. Allow the custard to cool to room temperature, then refrigerate for at least 2 hours before serving.
