Ingredients:

  • 2 large onions, cut into wedges
  • 3 tablespoons olive oil
  • 1/2 cup fresh cilantro, chopped
  • 1 stalk lemongrass, finely chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup balsamic vinegar
  • Salt and pepper to taste
  • Mixed salad greens for serving

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the onion wedges with olive oil, salt, and pepper. Spread them on a baking sheet in a single layer.
