Ingredients:

  • 2 chicken breasts, diced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 cup dry pasta (your choice)
  • 1 can black beans, drained and rinsed
  • 1/2 cup fresh cilantro, chopped
  • Juice of 1 lime
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon cumin
  • 1 teaspoon paprika

Instructions:

  1. In a large pot, bring salted water to a boil and cook the pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 5 minutes.
  3. Add minced garlic and cook for an additional minute until fragrant.
  4. Add the diced chicken breast to the skillet, season with salt, pepper, cumin, and paprika. Cook until the chicken is browned and cooked through, about 7-10 minutes.
  5. Stir in the black beans and cook until heated through, about 2 minutes.
  6. Add the cooked pasta to the skillet, along with the lime juice and chopped cilantro. Toss everything together until well combined.
  7. Serve warm, garnished with additional cilantro if desired.
