Ingredients:

  • 2 chicken breasts
  • 1 cup couscous
  • 2 cups chicken broth
  • 1 cup grated carrots
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced and zested
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Optional: lime wedges for serving

Instructions:

  1. In a small bowl, whisk together lime juice, lime zest, olive oil, garlic powder, salt, and pepper.
  2. Place the chicken breasts in a resealable bag or shallow dish and pour the marinade over the chicken. Let it marinate for at least 30 minutes.
  3. In a saucepan, bring the chicken broth to a boil. Stir in the couscous and grated carrots, then cover and remove from heat. Let it sit for 5 minutes.
  4. While the couscous is cooking, heat a grill pan or skillet over medium-high heat. Remove the chicken from the marinade and cook for about 6-7 minutes on each side, or until fully cooked and no longer pink in the center.
  5. Fluff the couscous with a fork and stir in the chopped cilantro.
  6. Serve the grilled chicken over a bed of carrot couscous, garnished with lime wedges if desired.
