Ingredients:

  • 2 chicken breasts
  • 1 large sweet potato, grated
  • 1 cup cooked rice
  • 1 lime, juiced
  • 1/4 cup fresh cilantro, chopped
  • 1 cup corn (fresh or frozen)
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix lime juice, chopped cilantro, salt, and pepper. Marinate chicken breasts in this mixture for at least 30 minutes.
  3. While the chicken marinates, prepare the sweet potato rice by combining grated sweet potato with the cooked rice in a skillet over medium heat. Add a tablespoon of olive oil and cook for about 5-7 minutes until the sweet potato is tender. Season with salt and pepper.
  4. In the same skillet, add corn and stir for another 2-3 minutes until heated through.
  5. Remove the chicken from marinade and place on a baking sheet. Bake for 20-25 minutes or until cooked through (internal temperature of 165°F/75°C).
  6. Once the chicken is done, let it rest for a few minutes before slicing.
  7. To serve, plate the sweet potato rice and corn mixture, top with sliced chicken, a dollop of sour cream, and sprinkle with shredded cheddar cheese.
