Ingredients:

  • 1 lb shrimp, peeled and deveined
  • 1 cup jasmine rice
  • 2 cups water or low-sodium chicken broth
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon cumin
  • 1 teaspoon paprika

Instructions:

  1. Rinse the jasmine rice under cold water until the water runs clear. In a pot, bring 2 cups of water or broth to a boil, then add the rice. Reduce the heat to low, cover, and simmer for about 15 minutes or until the rice is tender and the liquid is absorbed. Fluff with a fork and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the diced onion and garlic, cooking until the onion becomes translucent.
  3. Add the diced red and green bell peppers to the skillet and sauté for about 5 minutes until they soften.
  4. Stir in the shrimp, cumin, paprika, salt, and pepper. Cook until the shrimp are pink and opaque, about 3-4 minutes.
  5. Remove the skillet from heat and stir in the lime juice and chopped cilantro.
  6. To serve, place a generous scoop of rice in a bowl and top with the shrimp and pepper mixture. Garnish with additional cilantro if desired.
