Ingredients:

  • 8 oz spaghetti
  • 1 lb shrimp, peeled and deveined
  • 1 medium onion, diced
  • 1 green bell pepper, diced
  • 2 cloves garlic, minced
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp olive oil
  • 1 tsp red pepper flakes (optional)
  • Salt and pepper to taste
  • Juice of 1 lime

Instructions:

  1. Cook the spaghetti according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and green pepper, and sauté until softened, about 5 minutes.
  3. Add the minced garlic and red pepper flakes (if using) to the skillet, cooking for an additional minute until fragrant.
  4. Add the shrimp to the skillet, seasoning with salt and pepper. Cook until the shrimp turn pink and opaque, about 3-5 minutes.
  5. Stir in the cooked spaghetti and lime juice, tossing to combine all ingredients thoroughly.
  6. Remove from heat and fold in the chopped cilantro just before serving.
