Ingredients:

  • 1 cup ground flaxseed
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup sunflower seeds
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 cup honey or maple syrup (optional for sweetness)
  • 1/2 cup almond milk (or any milk of choice)

Instructions:

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine the ground flaxseed, baking powder, salt, sunflower seeds, and ground cinnamon.
  3. In another bowl, whisk together the eggs, vanilla extract, honey or maple syrup (if using), and almond milk until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. Spoon the batter evenly into the prepared muffin tin, filling each cup about 2/3 full.
  6. Bake for 20-25 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
  7. Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
