Ingredients:

  • 4 slices of bread (white or whole wheat)
  • 2 tablespoons butter, softened
  • 4 slices of cheddar cheese
  • 1 can (14 oz) of diced tomatoes
  • 1 cup vegetable broth
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon sugar
  • Salt and pepper to taste
  • Fresh basil leaves for garnish (optional)

Instructions:

  1. In a saucepan, heat a tablespoon of butter over medium heat. Add the diced onion and garlic, sautéing until softened, about 3-4 minutes.
  2. Add the canned tomatoes (with juice) and vegetable broth to the saucepan. Stir in the sugar, salt, and pepper. Bring to a simmer and cook for 15 minutes.
  3. Using an immersion blender, blend the soup until smooth. Adjust seasoning if necessary and keep warm on low heat.
  4. Meanwhile, heat a skillet over medium heat. Spread butter on one side of each slice of bread.
  5. Place two slices of bread, buttered side down, in the skillet. Layer two slices of cheddar cheese on top of each slice of bread.
  6. Top with the remaining slices of bread, buttered side up. Cook until golden brown, about 3-4 minutes, then flip and cook the other side until the cheese is melted and the bread is golden.
  7. Remove the sandwiches from the skillet and cut in half. Serve hot with a bowl of tomato soup, garnished with fresh basil if desired.
