Classic Chicken Piccata

Ingredients:

  • 2 boneless, skinless chicken breasts
  • 1/2 cup all-purpose flour
  • Salt and pepper to taste
  • 4 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 1/2 cup fresh lemon juice
  • 1 cup chicken broth
  • 1/4 cup capers, rinsed and drained
  • 2 tablespoons fresh parsley, chopped

Instructions:

  1. Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness of about 1/2 inch.
  2. Season the flour with salt and pepper, then dredge each chicken breast in the flour, shaking off the excess.
  3. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the chicken breasts and cook for about 3-4 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add the remaining olive oil and 2 tablespoons of butter. Once melted, add the lemon juice, chicken broth, and capers. Bring to a simmer and cook for about 2 minutes, scraping up any browned bits from the bottom of the pan.
  5. Return the chicken to the skillet and simmer for an additional 2 minutes, allowing the flavors to meld.
  6. Remove the skillet from heat and stir in the remaining butter and chopped parsley. Serve the chicken with the sauce spooned over the top.
