Ingredients:

  • 4 large yellow onions, thinly sliced
  • 4 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon sugar
  • 8 cups beef broth
  • 1/2 cup dry white wine
  • 1 teaspoon fresh thyme leaves
  • 1 bay leaf
  • 1 baguette, sliced
  • 2 cups grated Gruyère cheese
  • Freshly ground black pepper, to taste

Instructions:

  1. In a large pot, melt the butter and olive oil over medium heat. Add the sliced onions and salt, and cook, stirring frequently, until the onions are caramelized and golden brown, about 25-30 minutes.
  2. Add the sugar to the onions and stir for another minute to enhance the caramelization.
  3. Pour in the white wine and scrape the bottom of the pot to deglaze. Allow the wine to reduce for about 5 minutes.
  4. Add the beef broth, thyme, and bay leaf. Bring to a simmer and let cook for at least 30 minutes to develop the flavors. Season with freshly ground black pepper to taste.
  5. While the soup is simmering, preheat your oven to 350°F (175°C). Place the baguette slices on a baking sheet and toast them in the oven until golden brown, about 10 minutes.
  6. To serve, ladle the hot soup into oven-safe bowls, top each with a slice of toasted baguette, and sprinkle generously with Gruyère cheese.
  7. Place the bowls under the broiler for 2-3 minutes, or until the cheese is bubbly and golden brown. Serve immediately.
