Ingredients:

  • 4 large yellow onions, thinly sliced
  • 4 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 cups beef broth
  • 1/2 cup dry white wine
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
  • 1 bay leaf
  • 8 slices of French baguette
  • 2 cups grated Gruyère cheese

Instructions:

  1. In a large pot, melt the butter and olive oil over medium heat. Add the sliced onions, sugar, salt, and pepper. Cook, stirring frequently, until the onions are caramelized and golden brown, about 30-40 minutes.
  2. Add the white wine to the pot, scraping any browned bits from the bottom. Cook for an additional 5 minutes until the wine has reduced slightly.
  3. Pour in the beef broth, add the thyme and bay leaf, and bring to a simmer. Reduce heat to low and let it simmer for 30 minutes, allowing the flavors to meld.
  4. Preheat the broiler. While the soup is simmering, toast the slices of baguette until golden brown.
  5. Remove the bay leaf from the soup. Ladle the soup into oven-safe bowls, place a slice of toasted baguette on top of each bowl, and generously sprinkle with Gruyère cheese.
  6. Place the bowls under the broiler for 2-3 minutes, or until the cheese is bubbly and golden brown. Serve hot.
