Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1/2 cup gluten-free all-purpose flour
  • 1/4 cup olive oil
  • 1/4 cup unsalted butter
  • 1/2 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 1/4 cup capers, rinsed and drained
  • 2 tablespoons fresh parsley, chopped

Instructions:

  1. Pound the chicken breasts to an even thickness and season both sides with salt and pepper.
  2. Dredge each chicken breast in gluten-free flour, shaking off any excess.
  3. In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for about 3-4 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add the butter, chicken broth, lemon juice, and capers. Bring the mixture to a simmer, scraping up any browned bits from the bottom of the pan.
  5. Return the chicken to the skillet and cook for an additional 2-3 minutes, spooning the sauce over the chicken to coat.
  6. Garnish with fresh parsley before serving. Enjoy with gluten-free pasta or sautéed vegetables.
