Ingredients:

  • 2 pounds of Yukon Gold potatoes, peeled and cut into wedges
  • 1/4 cup olive oil
  • Juice of 2 lemons
  • 4 cloves garlic, minced
  • 1 tablespoon dried oregano
  • Salt and pepper to taste
  • 1 cup vegetable broth or water
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper.
  3. Add the potato wedges to the bowl and toss until they are well coated with the mixture.
  4. Transfer the potatoes to a large baking dish, spreading them out evenly.
  5. Pour the vegetable broth or water around the potatoes (not directly on top) to help steam them during roasting.
  6. Cover the baking dish with aluminum foil and place it in the preheated oven.
  7. Bake for 30 minutes, then remove the foil and continue baking for an additional 20-30 minutes, or until the potatoes are golden brown and tender, turning them occasionally for even cooking.
  8. Once done, remove from the oven and garnish with freshly chopped parsley before serving.
