Ingredients:

  • 2 pounds of Yukon Gold potatoes, peeled and cut into wedges
  • 1/4 cup olive oil
  • Juice of 2 lemons
  • 4 cloves of garlic, minced
  • 1 tablespoon dried oregano
  • Salt and pepper to taste
  • 1 cup vegetable broth or water
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper.
  3. Add the potato wedges to the bowl and toss until they are well coated with the lemon mixture.
  4. Transfer the potatoes to a large baking dish and pour the vegetable broth or water around them.
  5. Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
