Ingredients:

  • 10 lbs ground beef (80/20)
  • 2 cups breadcrumbs
  • 2 cups milk
  • 2 cups finely chopped onion
  • 2 cups finely chopped bell pepper (red and green)
  • 1 cup grated carrots
  • 1 cup ketchup (plus extra for topping)
  • 1/2 cup Worcestershire sauce
  • 4 large eggs
  • 1/4 cup chopped fresh parsley
  • 4 cloves garlic, minced
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper (optional for heat)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, sauté the chopped onions, bell peppers, and carrots over medium heat until softened, about 5-7 minutes. Let cool slightly.
  3. In a large mixing bowl, combine the ground beef, breadcrumbs, milk, sautéed vegetables, ketchup, Worcestershire sauce, eggs, parsley, garlic, salt, black pepper, thyme, paprika, and cayenne pepper (if using). Mix until just combined, being careful not to overwork the meat.
  4. Transfer the meat mixture to a large loaf pan or shape into a loaf on a lined baking sheet. Brush the top with additional ketchup.
  5. Bake in the preheated oven for 1 hour, or until the internal temperature reaches 160°F (70°C).
  6. Let the meatloaf rest for 10-15 minutes before slicing and serving.
