Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon active dry yeast
  • 1 teaspoon salt
  • 1 tablespoon olive oil
  • 3/4 cup warm water
  • 1 cup canned San Marzano tomatoes, crushed
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes
  • 8 ounces fresh mozzarella cheese, sliced
  • 1/2 cup bell peppers, thinly sliced
  • 1/2 cup mushrooms, sliced
  • 1/4 cup fresh basil leaves
  • Salt and pepper to taste
  • Cornmeal for dusting

Instructions:

  1. In a large bowl, combine flour, yeast, and salt. Gradually add warm water and olive oil, mixing until a dough forms.
  2. Knead the dough on a floured surface for about 10 minutes until smooth. Place in a greased bowl, cover, and let rise for 1 hour or until doubled in size.
  3. While the dough rises, prepare the tomato sauce by heating olive oil in a saucepan over medium heat. Add minced garlic and sauté until fragrant.
  4. Add crushed tomatoes, oregano, red pepper flakes, and season with salt and pepper. Simmer for 20 minutes until thickened.
  5. Preheat the oven to 475°F (245°C) and place a pizza stone or baking sheet inside to heat.
  6. Once the dough has risen, punch it down and roll it out on a floured surface to your desired thickness. Transfer to a cornmeal-dusted pizza peel or baking sheet.
  7. Spread a thin layer of the prepared tomato sauce over the dough, leaving a small border around the edges.
  8. Arrange slices of fresh mozzarella on top, followed by the bell peppers and mushrooms. Sprinkle with fresh basil.
  9. Carefully slide the pizza onto the preheated stone or baking sheet. Bake for 10-12 minutes until the crust is golden and the cheese is bubbly.
  10. Let the pizza cool slightly before slicing. To freeze, wrap slices tightly in plastic wrap and store in an airtight container.
