Ingredients:

  • 1 medium eggplant, diced
  • 2 medium zucchini, sliced
  • 1 bell pepper (red or yellow), diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 ripe tomatoes, chopped
  • 1/4 cup olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions:

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
  3. Stir in the diced eggplant and cook for about 5 minutes until it begins to soften.
  4. Add the diced bell pepper and zucchini, cooking for another 5-7 minutes until the vegetables are tender.
  5. Incorporate the chopped tomatoes, dried thyme, and dried basil. Season with salt and pepper.
  6. Reduce the heat to low, cover the skillet, and let it simmer for about 20-25 minutes, stirring occasionally.
  7. Once the vegetables are tender and the flavors meld together, remove from heat.
  8. Serve warm, garnished with fresh basil leaves.
