Ingredients:

  • 1 cup jasmine rice
  • 1 can (13.5 oz) coconut milk
  • 1 cup water
  • 1 tablespoon lime juice
  • 1 teaspoon lime zest
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1 ripe pineapple, peeled and sliced
  • 1 tablespoon coconut oil
  • Fresh cilantro for garnish

Instructions:

  1. Rinse the jasmine rice under cold water until the water runs clear.
  2. In a medium saucepan, combine the rinsed rice, coconut milk, water, sugar, and salt. Bring to a boil over medium heat.
  3. Once boiling, reduce the heat to low, cover, and simmer for about 15-20 minutes, or until the rice is tender and the liquid is absorbed.
  4. While the rice is cooking, preheat a grill or grill pan over medium heat. Brush the pineapple slices with coconut oil.
  5. Grill the pineapple for about 3-4 minutes on each side until grill marks appear and the pineapple is caramelized.
  6. Once the rice is cooked, remove it from heat and fluff with a fork. Stir in lime juice and lime zest.
  7. Serve the coconut lime rice topped with grilled pineapple slices and garnish with fresh cilantro.
