Ingredients:

  • 1 cup glutinous rice
  • 1 1/2 cups coconut milk
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 2 ripe mangoes, peeled and sliced
  • Sesame seeds or mung beans for garnish (optional)

Instructions:

  1. Rinse the glutinous rice under cold water until the water runs clear. Soak the rice in water for at least 4 hours or overnight.
  2. Drain the soaked rice and steam it in a bamboo or metal steamer lined with cheesecloth for about 25-30 minutes, or until the rice is tender and sticky.
  3. While the rice is steaming, combine the coconut milk, sugar, and salt in a saucepan over medium heat. Stir until the sugar dissolves and the mixture is warm, but do not let it boil.
  4. Once the rice is cooked, transfer it to a large bowl and pour about 1 cup of the warm coconut milk mixture over it. Stir gently to combine and let it sit for about 30 minutes to absorb the flavors.
  5. To serve, place a portion of the coconut sticky rice on a plate, top with sliced mango, and drizzle with additional coconut milk. Garnish with sesame seeds or mung beans if desired.
