Ingredients:

  • 4 bone-in, skin-on chicken thighs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup fresh pineapple, diced
  • 1/4 cup red onion, finely chopped
  • 1 jalapeño, minced (optional for heat)
  • Juice of 2 limes
  • 1/4 cup fresh cilantro, chopped

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, mix garlic powder, onion powder, cumin, smoked paprika, oregano, salt, and pepper.
  3. Rub the spice mixture all over the chicken thighs, ensuring they are well coated.
  4. In a large oven-safe skillet, heat olive oil over medium-high heat. Once hot, add the chicken thighs skin-side down and sear for 5-7 minutes until the skin is golden brown.
  5. Flip the chicken thighs and transfer the skillet to the preheated oven. Bake for 25-30 minutes or until the internal temperature reaches 165°F (74°C).
  6. While the chicken is baking, prepare the pineapple salsa by combining diced pineapple, red onion, jalapeño (if using), lime juice, and cilantro in a bowl. Mix well and set aside.
  7. Once the chicken is cooked, remove it from the oven and let it rest for a few minutes.
  8. Serve the chicken thighs topped with the fresh pineapple salsa.
