Ingredients:

  • 2 cups red kidney beans, soaked overnight
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 medium tomato, diced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 2 tablespoons vegetable oil
  • 4 cups water
  • Salt to taste
  • Fresh cilantro for garnish

Instructions:

  1. Drain the soaked kidney beans and set aside.
  2. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and cook for an additional minute until fragrant.
  4. Stir in the diced tomato, ground cumin, and paprika, cooking for another 2-3 minutes until the tomatoes soften.
  5. Add the drained kidney beans and water to the pot. Bring to a boil, then reduce the heat to low and simmer for about 1 to 1.5 hours, or until the beans are tender.
  6. Season with salt to taste and garnish with fresh cilantro before serving.
