Ingredients:

  • 1 cup pancake mix
  • 1/2 cup cornmeal
  • 1 cup water
  • 1 tablespoon sugar
  • 1/2 teaspoon baking powder
  • 2 tablespoons melted butter
  • 1/4 cup honey
  • 2 tablespoons softened butter (for honey butter)

Instructions:

  1. In a mixing bowl, combine pancake mix, cornmeal, sugar, and baking powder.
  2. Gradually add water and melted butter, stirring until just combined. Do not overmix; a few lumps are okay.
  3. Preheat a non-stick skillet or griddle over medium heat. Lightly grease with butter or cooking spray.
  4. Pour 1/4 cup of the batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes.
  5. Flip and cook for an additional 2-3 minutes until golden brown.
  6. For the honey butter, in a small bowl, mix softened butter and honey until well combined.
