Ingredients:

  • 12 mini bell peppers
  • 8 oz cream cheese, softened
  • 1/4 cup shredded cheddar cheese
  • 2 tablespoons fresh chives, chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1/4 cup breadcrumbs
  • 1 tablespoon olive oil

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Slice the mini bell peppers in half lengthwise and remove the seeds.
  3. In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, chives, parsley, garlic powder, onion powder, and black pepper. Mix until well combined.
  4. Fill each pepper half with the cream cheese mixture, pressing it down gently to pack it in.
  5. In a small bowl, mix the breadcrumbs with the olive oil until evenly coated.
  6. Sprinkle the breadcrumb mixture over the filled peppers.
  7. Arrange the stuffed peppers on a baking sheet and bake for 20-25 minutes, or until the peppers are tender and the breadcrumbs are golden brown.
  8. Remove from the oven and let cool slightly before serving.
