Ingredients:

  • 4 cups celery, chopped
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 2 cups whole milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground nutmeg
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh parsley for garnish

Instructions:

  1. In a large saucepan, melt the butter over medium heat. Add the chopped celery and sauté for about 5 minutes until slightly softened.
  2. Sprinkle the flour over the celery and stir well to combine, cooking for another 2 minutes to eliminate the raw flour taste.
  3. Gradually whisk in the milk, stirring constantly until the mixture thickens, about 5-7 minutes.
  4. Season with salt, black pepper, and nutmeg. If using, stir in the grated Parmesan cheese until melted and well incorporated.
  5. Remove from heat and let it cool slightly before serving. Garnish with fresh parsley for a pop of color.
