Ingredients:

  • 2 slices of whole grain bread
  • 1 ripe avocado
  • 2 large eggs
  • 1 clove garlic, minced
  • 1 tablespoon lemon juice
  • Salt, to taste
  • Black pepper, to taste
  • Red pepper flakes, to taste
  • Fresh herbs (such as chives or cilantro) for garnish

Instructions:

  1. Toast the slices of whole grain bread until golden brown.
  2. In a small bowl, mash the ripe avocado with minced garlic, lemon juice, salt, and black pepper until creamy. Adjust seasoning to taste.
  3. Bring a pot of water to a gentle simmer. Crack each egg into a small bowl, then gently slide them into the simmering water. Poach the eggs for about 3-4 minutes, or until the whites are set but the yolks are still runny.
