Ingredients:

  • 2 chicken breasts, diced
  • 8 oz pasta (your choice)
  • 1 cup plain yogurt
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup fresh basil, chopped
  • 1/2 cup grated cheese (Parmesan or mozzarella)
  • 2 tbsp olive oil

Instructions:

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced chicken and season with salt, pepper, and oregano. Cook until the chicken is browned and cooked through, about 5-7 minutes.
  3. Add the minced garlic to the skillet and sauté for 1 minute until fragrant.
  4. Reduce the heat to low and stir in the yogurt until well combined. If the sauce is too thick, add a splash of pasta water to reach your desired consistency.
  5. Add the cooked pasta to the skillet and toss to coat in the sauce. Stir in the chopped basil and half of the grated cheese.
  6. Serve immediately, garnished with the remaining cheese and additional fresh basil if desired.
